ZESTY LEMON FARRO SALAD
Makes about 3 servings
INGREDIENTS
1 cup cooked farro, cold
1 cup chickpeas
1 tomato, diced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/2 cucumber, chopped
1/4 cup kalamata olives
1/2 fresh parsley, chopped
For Dressing
2 tablespoons olive oil
1 teaspoon lemon zest
1/4 cup lemon juice
1-2 garlic clove(s), minced
1 teaspoon Dijon mustard (or Tahini)
Salt and pepper to taste
INSTRUCTIONS:
To make dressing: whisk all ingredients until well combined. Set aside.
To make salad: Toss farro and all vegetables together until well combined. Top with the dressing and serve over additional greens or just like that!
