ZESTY LEMON FARRO SALAD

Makes about 3 servings

INGREDIENTS

  • 1 cup cooked farro, cold

  • 1 cup chickpeas

  • 1 tomato, diced

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1/2 cucumber, chopped

  • 1/4 cup kalamata olives

  • 1/2 fresh parsley, chopped

For Dressing

  • 2 tablespoons olive oil

  • 1 teaspoon lemon zest

  • 1/4 cup lemon juice

  • 1-2 garlic clove(s), minced

  • 1 teaspoon Dijon mustard (or Tahini)

  • Salt and pepper to taste

INSTRUCTIONS:

  1. To make dressing: whisk all ingredients until well combined. Set aside.

  2. To make salad: Toss farro and all vegetables together until well combined. Top with the dressing and serve over additional greens or just like that!
